{Fresh Friday}

Hello & Happy Friday!! You know how I love Friday's:)
So...how are you doing on your get fit and healthy goals from New Year's??!!
By now....people have often given up and moved on!! but DON'T let that happen to you!! Once you have a dream or a goal you have to get a plan formulated!!
I know life can get in the way of healthy eating or working out.....
But there are always a million "excuses!" If I waited until I was in the mood to workout I would almost NEVER workout:)
And if I ate pizza every time I wanted to eat pizza it would be EVERYDAY:)
I am not perfect by any means.....but I do know that you have to have a plan and it takes work to get to where you want to be! Whether it's a professional goal, a health and fitness goal, a relationship goal, or any other goal you may have:)

Personally....I am still working towards my ultimate goal.....if {rather I should say, when} I get there....you'll be the first to know what it was!! For now it's top secret:)

Remember, you are the only person you need to be accountable to! If you eat naughty foods in the privacy of your home and aren't happy about it...then make yourself accountable!
The girls at work always ask me how I deal with temptations.
Well...I am definitely NOT perfect....but I just stop and think about if what I am about to put in my mouth is worth how I will feel after I eat it!!

And I have also become really creative at making even naughty foods, healthy!!

OK.....I also have a little motivation area on my refrigerator...It's a compilation of things i've done....goals yet to come and little motivational quotes that I like!
It needs to be updated but it still does the trick:) I look at it before I reach into the fridge!

Trust me there are plenty of not so healthy foods in my home!! My husband is not all that concerned about what he eats:)

Also, I just added my training schedule for the half marathon I will run in May:)
For me, I work better with a plan!!
As i've heard "fail to plan & plan to fail"!

Here it is... I like plans...they help me focus!

Now I am not perfect and I am sure I won't stick to this schedule exactly but I have no doubt i'll stick to it pretty closely:)

Ok...so enough about that!!


Now to the FOOD:)

I think if one is to be healthy about eating then they have to have simple but yummy go to foods that still satisfy! Now that was a mouthful:)


One of those go to foods for me is guacamole!! It feels like i'm eating something unhealthy but it's chock full of healthy fats and paired with Guiltless Gourmet Chips it's not too bad for you!As i've said before....don't be afraid to experiment!
Add what you want and delete what you don't like:)
{edit.....I just looked through my blog and realized that I have posted about guacamole before:)
I guess I really want you to make some!!!! If you do let me know~}
~Guacamole~
avocado
red onion
tomato
jalapeno
cilantro
{chop it all up and throw it in the food processor}
then add a little
lime & sea salt.

Wallah....Now that looks delicious....at least in my opinion~
Another simple thing to whip up in a hurry are

~Refried Black Bean Tacos~

Don't they look yummy?!?!? I used little low carb tortillas {only 50 calories each}
refried black beans
avocado
tomato
onion
cilantro
And instead of sour cream.....
Greek Yogurt with chili powder & cumin

and you definitely know by now that I love my vino and enjoy it with many evening meals:)
Now...this looks like a lot of food and for me it WAS!!! but calorie wise...all three tacos were less than 500 calories!!!
So see....you can get a lot of tasty food for not that many calories!!

And now just to show the reality of my house...
Here's my husbands take on Taco's~

That hurts my stomach just looking at it!!
Ground Beef
Full fat cheddar cheese
Taco Sauce
Full fat sour cream

Now that would not be a healthy option meal!! but I guess every once in awhile if you insist!!!!!

Oh and........
my husband surprised me with a Flip Camcorder last night!!

    I am actually pretty much done with my journey of getting back to being fit and healthy:)

    I am now at the place where I hope I can keep myself inspired and inspire others!

    Truthfully, I had always been super fit and healthy until my grandfather passed away 6 years ago. I think I was really depressed and just stopped working out and watching what I ate. It took about 4 years until I started to get back on track and now I am totally back on track and just looking forward to accomplishing even more!!

  5. Hola! Yes I am am enjoying a little cooking thanks to your inspiration.

    As far as my fitness goals. so far so good. slow and steady. I would like to lose about 10 lbs but more than anything just firm up. I am 35 so I am trying to build muscled so I don't end up being a saggy old lady. As far as food. I am pretty good about brown, rice protein, veggies. My biggest prob is after school I am starving! and ready for dinner but B does not get home til 7pm so it is hard not to eat the whole house before gets home. I snack well but I find the working out the HARDEST. I don't want to work out after school and I have 8oclocks so I really can;t before. BUT I am trying not to make excuses and just work out after I have a snack and walked the dogs. LAst week was my first week back and I did pretty well with gym time and eating wise. Anyway, that's my story, sorry for the long post. But you def help me stay motivated.

  6. LOL to the difference between your meal and your hubs. It's funny, my body sometimes craves only what you made and other times it wants what your hubs has (but even then, less cheese). I realize it's only when I am stressed that i want to over indulge.
