{Fresh Friday}

Hi there..
Thank you so much for all the thoughts and opinions on my dilemma!! {If that's the only dilemma I have in my life, i'll be a lucky person}
I have decided that I am going to end my time in the Master Gardener Program.
I am definitely sad because I was really looking forward to this!!!
I have come to accept that the program is not in any way, shape or form in alignment with my philosophies on numerous things! I did the program only as something fun to do, it's not for my career or anything else....just something to do!! I like to learn:) So I am going to chalk it up to ....I tried it and it's not for me!!

Now onto Fresh Friday~
It includes two nutritional powerhouses!!

I love spaghetti squash!! It's so simple to make and it tastes fabulous!! And since I now add dark leafy greens to just about everything I eat I thought it would be tastey with the spaghetti squash. Kale is one of the super healthy ones I use frequently.I whipped this dinner up in about 15 minutes!! I cook my spaghetti squash in the microwave!! Cut it in half....empty the seeds and put it flesh side down in a little plate of water... throw in the microwave on high for about 10 minutes!

Pull it out and take a fork and scrape out the inside!! Viola....spaghetti!!

Garlicy Spaghetti Squash w/Vegetables

Here's my healthy take on Spaghetti Squash (remember I don't measure things...I just throw them in the pan) Feel free to make substitutions!!!
Spaghetti squash (prepared as mentioned above)
edamame
kale (chopped up)
broccoli
Fresh diced tomatoes
Parsley
Olive Oil (to saute everything in)
garlic, sea salt, pepper (to taste)
simple enough!!! Even in your in a super rush....you can still take 15 minutes to make a healthy meal! And you could even pair with a piece of hearty whole grain bread. Or if your me, you could pair it with a yummy glass of cabernet! Oh and don't forget to enjoy your dinner with a little fire and candle light~ On being fit and healthy~
If you are like I was when I began on my quest to get fit and healthy I was just OVERWHELMED on where to begin and what to believe!

Well for me......

I started by exercising! After I started that I really started looking at what I ate and asking....was it helping me in reaching my goals (weight loss, fitness, feeling good and having energy).

At first...I would eat way toooooo much pizza and drink toooooo much beer on the weekends and wonder why I felt like poooo on Mondays and didn't loose a pound (tip....don't NOT change your habits and still expect any kind of change)

Next, I tried the high protein-low carb thing and I just couldn't make myself eat one more bowl of cottage cheese, plus I like carbs(tip....don't make yourself do things you don't enjoy)

Next, I went vegan .....hmm now i'm onto something...my stomach started really feeling good. (tip....if you have tummy troubles....they may make it challenging to excersie and lose weight....try and figure out what's giving you troubles.....wheat, dairy and soy are the most common)

Now, I focus on WHOLE FOODS, meaning mostly fruits and veggies and only things that I know what everything on the label means!! This includes bread, sprouted grain english muffins, and blue corn chips!! (tip....take time to figure out what WORKS for you...... don't try and do what everyone else is doing)

I am still reading everything I can get my hands on! But now I am more aware of what will work for me and what won't!! i don't try to exclude things I know I like and I don't try and make myself eat things I know I don't like!!

If you are wanting to get a little more fit and healthy...move more, figure out what foods work and don't work for you and read....read...read!!

Oh and if you haven't figured it out.....I didn't give up my wine:)

You don't have to give up every little thing to be fit and healthy!! Plus, wine makes me too happy:)

Now I listen to my body and eat whole foods when i'm hungry! I am still a terrible stress eater...but it's no longer gorge on goldfish crackers or cheese covered pizza, now it's more like ...guacamole(I took the time to make) and organic flaxseed chips!! Since I have been eating this way...I find it just takes less to fill me up!! Plus I feel a lot better!! I have a little more to go...but I am learning and enjoying every minute of it!!

And i've worked on my fitness so much....that at my gym they asked if I would be interested in teaching Spinning.....me...I can't believe it!! I never would have guessed I would have worked hard enough to actually teach others how to get fit!! :) I think I just might take them up on thier offer!! I'll keep you posted! woohoo and I hope i've inspired you (even if just a tiny bit) to get out and get a little fit and healthy:)

  1. Sounds like you have a great food philosophy worked out! I agree, listening to your body is definitely the way to go. Once you clear out all the junky, not real foods, the body will send pretty clear signals about what it wants to eat and when. And yes, guacamole is ALWAYS on my menu!

  3. Well I wondered what you had decided on the Master Gardener's thing. Sounds like you made the right choice. I used to think if I started a book I had to finish it - when I realized that I didn't have to it was kind of liberating!
    Way to go on changing your lifestyle!

  5. ive just recently finally TRIED spaghetti squash ( how was i deprived for this long ??) and fell in love pretty much! yours looks amazing and makes me want to have it again asap! :)

  7. Kudos to you girl. I agree, eating whole foods makes me most happy too. While I don't eat like crap alot anyway, I am taking 5 days out of every month to be religious and eat nothing but clean. No caffeine, no alcohol, nothing packaged or processed.

    Doing that once a month and losing maybe a pound will keep 12 pounds off each year. It works for me.
