Happy Friday! Sorry I am late getting around to my Fresh Friday post...but it has been a super hectic week~
I did a fresh take on hummus~
roasted garlic, butternut squash and the usual hummus suspects.
It turned out like this~

I topped it with roasted pumpkin seeds and fresh sage.
OK..here's my attempt at giving you the recipe.
1 can of garbanzo beans
1/2 of a butternut squash roasted in the oven for about an hour on 425
a couple tbls of tahini (sesame seed paste)
fresh squeezed lemon
cumin....to taste
sea salt and pepper
Throw it all in the food processor until smooth! Enjoy with some Guiltless Gourmet Blue Corn Chips!!!!
I have to admit I made this for dinner tonight, soup just sounded so good. If you can imagine.....it's putrid here again in Indiana!! No sun for I don't know how many days!! So the honey and I stayed in made dinner (no...he didn't eat this...I made him frozen meat lasagna and cheezy garlic bread). We rented movies, had cocktails and enjoyed the nice dinner sitting around the fire:) Hey, at least it something!! Believe me....I would rather be enjoying a nice glass of vino listening to the waves of the ocean....but I AM NOT!!! haha~
The soup was a lovely pea soup....
It's so simple!! Pesto and frozen peas!! I wish I could take credit for this recipe but luckily I have a friend that made it for me once and I have been hooked every since!!!
I know what you're thinking.....peas....YUCK!! but trust me give this a whirl and you too will be hooked!!! Plus it's super healthy~
All you do is boil about 3 cups of water...throw in a bag of organic frozen peas and add
pesto to taste!!! Oh and then blend it in the blender....I can't even tell you how awesome this soup is!!! Let me know what you think if you do happen to whip this up~
Of course you know that I love to enjoy a little vino with my dinner:) This time I chose....
YIKES....I know a little rough...but it is soooooo how I feel after DAYS AND DAYS with no sun~
I think my husband would AGREE!!!!!
At least I have one thing to look forward to this weekend!! Tomorrow we are going on the Michigan Wine Tour!!! Yippee~
I hope there is at least a little sun so that I might get a couple good vineyard photographs to share with you all!!! Keep your fingers crossed:)

OH.....I almost forgot to say....I hope you are not getting tired of all my soups but it's all I want to eat during the cold, dreary months:) Just hang in there...it will be spring in 6 months~

i love hummus and have never tried making my own...you've inspired me to try. yours looks yummy.

So funny, I know that wine and bought it for a friend. That's how I feel for the past week or so. I am so sick of the heat here and waiting for cooler days. I want to feel Autumn like everyone else.
